Everyone requested things that they wanted or needed, perfume, clothes, tools, ect...
I got my bro who lives in Boston, and he wanted a live action camera for when he goes mountain biking and so that's what I got him. He got my step father, who luckily for me, wanted an ice cream maker!!!! I've wanted one for years but because they are a bit expensive I have never bought one or requested one as a gift. So I was psyched that my step dad got one. He's used it once, I've used it about 5 or 6 times so far.
The first ice cream that I ever made was a salted carmel ice cream and it was amazing. I use to get Cold Stone's cake batter ice cream with cookie dough, kit kats and gummy bears mixed in and so one ice cream I really wanted to make was cake batter ice cream, and so, I did!
I found a blog that had a recipe for both cake batter cookies and cake batter ice cream, which was great because not too much of the boxed cake mix went to waste.
Cake Batter Cookies
1 1/4 cup all-purpose flour
1 1/4 cup yellow boxed cake mix
1/2 tsp baking soda
3/4 cup butter (room temp)
1/2 cup sugar
1/2 cup light brown sugar
1 egg (room temp)
1 1/2 tsp vanilla
1 cup semisweet chocolate chips
1/2 cup jimmies (Sprinkles for all you non New Englanders) (Optional)
Mix your dry (flour, cake mix, and baking soda) well.
In another bowl cream together your butter and sugars until light and fluffy, then beat in the egg and vanilla.
Add your dry mixture to your wet mixture (butter, sugars, egg, vanilla)
Mix until combined.
Fold in your chocolate chips and jimmies.
Chill your cookie dough for at least an hour.
Preheat your oven to 350.
Scoop your cookies onto a pan lined with parchment.
Bake for 10-12 minutes.
Cake Batter Ice Cream
3/4 c sugar
2 egg yolks
1 c milk
2 c heavy cream
1 ts vanilla
3/4 c box yellow cake mix
In a large bowl cream together 1/4 of your sugar with your egg yolks, until the mixture is light and fluffy.
Add 1/2 c sugar to the sugar and yolk mixture.
Mix until combine.
Add the milk, cream, and vanilla.
Mix until the sugar has dissolved somewhat.
Mix in the dry cake mix.
Whisk well!
Chill the ice cream base for at least 3 hrs, the colder that the mixture goes in the ice cream maker, the better. I chilled my mixture overnight.
Add your ice cream base to your ice cream maker. (Follow your ice cream maker instructions)
My ice cream maker took about a half of hour to get it to ice cream consistency.
After the ice cream maker did it's job, I transferred the ice cream into a contained and popped it into the freezer to let it set up.
Enjoy! Maybe you can even attempt epic cake batter ice cream sandwiches!
